Result

Cauliflower is a very sparse bulk, it doesn’t contain much of anything per gram. As such you can use it as a substitute “rice”.

Ingredients

  • Mixing spoon
  • Grater
  • Large Bowl
  • Small/medium saucepan

Method

  1. Grate the cauliflower florets into the bowl so that it has the consistency of rice
  2. Add two tablespoons of almond butter to the pan and heat it on a medium heat for a minute or two
  3. Now add the cauliflower grains and salt and pepper and small amount of water.
  4. Mix it all together until the grains are coated in the almond
  5. Keep the heat at medium for 3-4 minutes, stirring every thirty seconds or so adding a bit of water to prevent the almond butter from solidifying on the base of the pan
  6. Turn up the heat to 6 to start burning off the excess water, keep mixing until the consistency is quite dry.
