Almond Fried Cauliflower Rice
Result
Cauliflower is a very sparse bulk, it doesn’t contain much of anything per gram. As such you can use it as a substitute “rice”.
Ingredients

Cauliflower (4 large florets)

Water (0.5 cups)

Almond Butter (2 tbsp)

Table Salt (2 pinches)

Black Pepper (2 pinches)
Equipment
- Mixing spoon
- Grater
- Large Bowl
- Small/medium saucepan
Method
- Grate the cauliflower florets into the bowl so that it has the consistency of rice
- Add two tablespoons of almond butter to the pan and heat it on a medium heat for a minute or two
- Now add the cauliflower grains and salt and pepper and small amount of water.
- Mix it all together until the grains are coated in the almond
- Keep the heat at medium for 3-4 minutes, stirring every thirty seconds or so adding a bit of water to prevent the almond butter from solidifying on the base of the pan
- Turn up the heat to 6 to start burning off the excess water, keep mixing until the consistency is quite dry.
